Greek Layered Dip and Kushyfoot

Let’s start with food then move onto feet.  An odd progression I know.  In fact, maybe I should start with the foot “thing” and move on to the food that way, while preparing this fantastic dip, your feet will feel great. No. We’ll start with the food. Greek Layered Dip – maybe a lot of ingredients but very easy to put together. 10 oz original flavor hummus 1 1/4 cup Greek Style Thick yogurt, fat free or lite *Strain yogurt first. Simply put in cheese cloth and allow to strain liquid in a colander for about 30 minutes. 1 tsp [...]

My Favorite Crustless Quiche

It’s getting close to another marathon run but this time it will be different.  I’m going solo.  That’s right.  My partner in “crime” is sending me off to Duluth, MN all by my lonesome.  Ted will be working on his own training for upcoming triathlons so after accompanying me on 16 previous marathons, he says “you’re on your own for this one.”   I don’t mind travelling on my own since I used to do it so often, starting in college then for work.  It’s just nice to have someone with you for conversation.  Then again, once a runner gets around [...]

That Which Drives Us and Gluten Free Pizza Crust

On days like today when the snow left from plows form moguls in the roads and the wind is blowing me backwards, when every step forward feels like tremendous effort, I wonder why I’m still running.  I’m no elite athlete.  This isn’t my job.  Is this REALLY what I have to do to stay in shape?!  When the effort is extreme, I do wonder why I continue to make myself suffer.  The only answer I can come up with is the challenge to be better. Better than I was last year or the year before. Not allowing age to get [...]

Carrot Currant Quinoa

From CU Chefs, Clemson University, featured in  American Culinary Federation’s Ingredient of the month:  Quinoa. Interesting Info about Quinoa: 1/4 cup uncooked yields 1 cup cooked and approximately 16% of the daily value recommendation for protein. Can be stored up to 1 year in the refrigerator or freezer.  There are several varieties available ranging from dark brown to almost white. The larger white varieties are more common.  The seed has a bitter coating and should be rinsed well with water before cooking.  To cook, add one part quinoa to two parts liquid and boil then cover, reduce to simmer for [...]

Breaking Routine and Mango Avocado Salsa

Our typical Friday night routine is dinner out then home to watch a movie or one of our favorite series when it’s not a repeat.  Our typical Saturday is spent doing chores after a good workout. Sunday, a long workout, breakfast and chores, baking/cooking something special and/or relaxing ….depends on the weather.  This week, we broke from routine. Friday:  We DID eat dinner out but went to Vernon Downs to see Ostrich and Camel races instead of the Standardbreds, (although they were racing as well). The Ostrich went off before the Camels.  The birds pulled a buggy sort of contraption [...]
