This recipe will make about 4 dozen.  This is the signature Apple Crumbles cookie. It is sweet  and, of course, contains fresh chopped apples.

The Cookie Dough

  • 3 1/4 cups all purpose flour
  • 1 tsp baking powder
  • 1 1/2 tsp apple pie spice
  • 1/2 cup sugar
  • 1/2 cup light brown sugar
  • 2 sticks butter, room temp.
  • 2 large Eggs
  • 2 tsp vanilla
  • 1/4 cup Apple Juice
  • 1/2 cup Apple Butter (one alternative is to use peanut butter for a different taste)
  • 1 cup chopped apples
  • 1/2 cup raisin puree
  • 1 cup chopped nuts (optional)

Crumble Coating

  • 1 1/4 cup dark brown sugar
  • 1 1/2 cup Quick oats
  • 1 1/4 tsp cinnamon
  • 10 TBS butter – melted

Preheat oven to 300 F.

Combine the flour, baking powder, apple pie spice.

In a separate bowl, blend the sugars. Add the butter and mix until slightly fluffy.  Add eggs and vanilla and beat until well blended. Add the apple juice and apple butter.  Add the flour mix, raisin puree, and nuts if you are using. Stir just to combine.

In a separate large bowl, combine first 3 ingredients for the crumble and mix well. Add the melted butter and mix to moisten. 

Prepare your cookie sheets with aluminum foil – UNGREASED.  Take about 1 1/2 tsp per cookie and roll into a ball (if your dough is not dry enough to roll, simply drop into the crumble mixture and shape into a ball from there) and roll in crumble mix.  Place onto cookie sheet about 2″ apart.  Bake 25 – 30 minutes until firm to touch and brown on the top.

Store in air tight container for 1 week or freeze for up to 3 months.
