I should have called this post “Joanne’s Kitchen Experiment” but then again, any time I begin perusing my cupboard shelves without a recipe in hand, anything that comes out of the oven is an experiment.

Thankfully, the result was another success.

Today I got busy with butter, oats, chocolate covered almonds, chocolate chips and cacao nibs.

Ingredients:  Makes 2 dozen

  • 1/2 cup + 3 TBS unsalted butter, softened
  • 1 1/2 cups sugar
  • 2 tsp vanilla
  • 2/3 cups skim milk
  • 21/2 cups flour
  • 1 1/4 cups oats
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cups chopped chocolate coated almonds

  • 1/2 cup mini chocolate chips
  • 1/4 cup cacao nibs
  • 2 TBS coconut sugar * Optional

Procedure:

Cream the butter with the sugar.  Add the vanilla and milk and mix for 3 minutes.

In a separate bowl, mix the flour, oats, baking powder and soda.   Add by 1/2 cup measures to the butter sugar mixture.

Gently mix in the chopped chocolate almonds, chips and nibs.

Line baking sheets with parchment and drop by TBS onto the baking sheets, about 2” apart.  *Sprinkle top with coconut sugar if you like

Bake for 15 minutes or until golden.
