Easy Apple Bread with Cherry Vanilla NuStevia

Before getting to the FAN-TAB-ULOUS recipe below, I have to share this running quote with you from Gibson’s Daily Running Quotes.  It’s so important to get words of inspiration like this to beginning runners.

When I started running, it took me 4 years to ever enter a race because I didn’t think I was fast enough. I didn’t think I could refer to myself as a runner.  What I learned after getting up enough nerve to enter that first 5K is that there is not rule on how fast you have to run to call yourself a runner. Just get out there, put one foot in front of the other.   It’s that easy.

Easy Apple Bread with Cherry Vanilla Essence2

Makes 2 large loaves

  • 3 cups all purpose flour
  • 2 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cider vinegar
  • 8 oz cinnamon applesauce
  • 2 medium, over ripe bananas, mashed
  • 1 peeled, cored and small chopped apple
  • 1 1/2 cups sugar
  • 10 to 15 drops Cherry Vanilla NuStevia
  • 1/2 cup canola oil
  • 4 large eggs
  • 1/4 to 1/3 cup cacao nibs (raw cacao is high in antioxidant flavanoids, sulfur and magnesium. The essential fatty acids found in chocolate may help the body to raise good cholesterol and lower bad cholesterol.)

Preheat oven to 350 F.  Spray 2 large loaf pans with non stick spray.

Blend the flour, baking powder, soda, and salt. Set aside

In a blender, mix the applesauce, banana, sugar, NuStevia, and oil.

Add the eggs one at a time. 

Add the flour mix and blend until just combines.  Stir in the apples and cacao nibs just to combine.

Pour into prepared pans and bake for 1 hour 5 minutes or until a knife inserted in the middle comes out clean.  Allow to cool before removing from pans.

    Mmm I’m excited to try this. I have a couple bottles of the cherry vanilla stevia myself and have mostly been mixing it into club soda to make a cherry vanilla crème drink.

    How long did it take me to call myself a runner? I’m still waiting for that. 🙂
