This Sunday I’ll be exploring the streets of Tacoma, Washington while enjoying the premiere event for the Marathon Maniacs.  I joined in October 2013.

Tacoma

The course was changed for the 2013 race to a net down hill route. Although the elevation profile doesn’t look too bad, the recaps from last year’s runners seem to tell a different story.  It makes me a little nervous, facing a rolling hill course that I won’t be able to drive before race day.  Maybe I should adopt Ted’s mind set:  “I like to be surprised.”  Just hoping that come Sunday, my body feels as good as it has this past week recovering from Boston. We’ve never been to Tacoma so what ever race day brings, we’ll make the best of the mini vacation.

This muffin is meant to be a good, healthy way to start the day.

Ingredients to make 18 muffins

  • 2 cups all purpose flour
  • 1/2 cup sugar
  • 1 TBS baking powder
  • 1 tsp salt
  • 2 cups Fiber One Cereal
  • 3/4 cups Ricotta cheese
  • 1 cup water
  • 8 oz crushed pineapple, no sugar added and UN-drained
  • 1 egg
  • 1/2 cup butter, melted

Preheat oven to 400 F. Spray 18 standard cupcake tins with non stick spray.

Combine flour, sugar, baking powder, salt in a bowl and set aside.

Mix Fiber One Cereal with ricotta cheese, water and pineapple plus the juice.. Allow to sit for 2 minutes.

Beat in the egg and melted butter to the cereal mix.  Add the flour just to combine.  Spoon into cupcake tins and bake for 26 minutes.

When it comes down to it, muffins are really little cakes we use as an excuse to eat cake for breakfast and feel good about it.
