For this interesting blend of flavors, you have to begin by making the bread.  Very easy and not your standard bread recipe.  The next day, it’s even tangier and I do mean the bread. It gets tangier.

Recipe makes 1 large standard loaf

Avocado Bread and Mussels with wine3

  • 3/4 cup luke warm 2 % milk
  • 1 1/4 tsp yeast
  • 1 small avocado – mashed
  • 1 medium over ripe banana – mashed
  • 2 tsp lime juice
  • 1 tsp citric acid (optional since not many home bakers have this in their cupboard)
  • 2 cups all purpose flour
  • 1 2/3 cup bread flour
  • 2 TBS beet sugar (granulated sugar will work fine)
  • 1 1/2 TBS Lecithin powder (again, optional for the same reason as the citric acid)
  • 1 tsp salt

Sprinkle the yeast into the warm milk and allow to sit for 10 minutes or while you prepare the banana and avocado mixture.

Mix together the mashed avocado with the mashed banana and stir in the lime juice and citric acid.

Mix the flours, sugar, lecithin, and salt.  Mix in the yeast-milk and blend on low for 5 minutes.  Add the avocado mix and blend until a soft ball forms, 5 more minutes.

Cover and allow to rest for 20 minutes.

Turn into a large loaf pan which has been sprayed with non-stick spray.  Allow to rest another 20 minutes, while the oven preheats to 350 Degrees. *Use steam setting if you have it.

Bake for 35 – 40 minutes.

Toast and serve with the following avocado dip:

  • 1 avocado mashed
  • 1 tomato – seeded and chopped
  • 1 green onion – chopped
  • pinch salt
  • pinch pepper
  • 2 tsp lime juice
  • pinch cilantro

Mix all the above and serve on the toasted avocado bread.
