Look at our proud graduate!

She was the only one in the class on graduation day. Maybe the holiday traffic at Consumer Square prevented the others from coming? Maybe they just weren’t ready for the TEST!
The pressure was on. Being the only one in the class, Zoey had to take the final exam under the watchful eye of Laura the instructor.
Things got a bit hairy as we entered the crowded aisles with all the distractions and little kiddies wanting to “pet the puppy”, but we were good and focused on Mommy. With the checklist completed from simply sit all the way to puppy push ups, Zoey scored 100%.
If Zoey wasn’t; a little doggy who shouldn’t eat chocolate, I’d bake her these very special MONSTER cookies by Giada De Laurentiliis. “Pure decadence in every bite.”
Makes 12 – 14 cookies or more if you make smaller cookies.
- 1/3 cup dark chocolate covered espresso beans
- 1 cup flour
- 2 TBS unsweetened cocoa powder
- 1 tsp. baking powder
- 1/4 tsp. salt
- 2 TBS unsalted butter – room temp
- 6 oz. semi sweet chocolate chips
- 3/4 cup sugar
- 2 large eggs – room temperature
- 1 tsp. vanilla
- 1 cup semi sweet chocolate chips
Preheat oven to 300 F. Line baking sheets with parchment.
Chop espresso beans in food processor then whisk with the flour, cocoa, baking powder and salt.
Melt the butter with the chocolate chips in the microwave. 1 minute at a time and stir until melted and combined.
In another bowl, whisk sugar, eggs, 2 TBS water and vanilla. Gradually add the flour mixture, then fold in the melted chocolate. Stir in the chips.
Scoop 1/4 cup balls of batter onto the baking sheets. Space 2” apart. Bake 22 minutes until slightly puffed and begin to crack.
Chewy with little crunchies from the beans.
That’s a gooood cookie!
Zoey didn’t get a cookie but she did enjoy a special doggy dinner instead.

My parents have a golden that just turned 1. She’s a bit of a menace and I know they’ve been thinking of taking her to an obedience class… except we tend to think of them as for puppies and I don’t know how well older dogs would respond to that type of thing?

And how funny is it that I made almost those exact same cookies yesterday. They turned out OK – I may have to try your recipe instead!
