Do you guys remember this?

On top of spaghetti,
All covered with cheese,
I lost my poor meatball,
When somebody sneezed.

It rolled off the table,
And on to the floor,
And then my poor meatball,
Rolled out of the door.

It rolled in the garden,
And under a bush,
And then my poor meatball,
Was nothing but mush.

The mush was as tasty
As tasty could be,
And then the next summer,
It grew into a tree.

The tree was all covered,
All covered with moss,
And on it grew meatballs,
And tomato sauce.

So if you eat spaghetti,
All covered with cheese,
Hold on to your meatball,
Whenever you sneeze.

Ted and I were trying to remember that song last night after dinner since he had ordered two great HUGE meatballs and ended up bringing 1 1/2 home.

The song came about when I almost dropped the meatballs… and they rolled out the door.    They didn’t roll out the door because luckily, I caught them in time.  But it triggered memories.

Any way…THIS MORNING…

It was a pretty morning and perfect for a run.  So Shane and I ran. It wasn’t the most delightful of runs since my legs are still tight and hamstrings hurt but we put in a good 6.2 miles.  Tomorrow, I’ll try to double the miles depending on how I feel after 6.  Geesh! It’s taking a long time for my bod to recover!

MUFFINS for SCRUFFINS

This is a very easy muffin recipe and, as usual, it’s very customizable.  I used equal whole wheat flour to regular all purpose but I would suggest you use more all purpose or simply use white whole wheat flour.  The reason?  The muffins had a trace of that whole wheat flour bitterness. What else might you try to cover whole wheat bitterness?  I’ve heard some folks increase the sugar.  Maybe add a banana. Any other suggestions to mask flour bitterness? These are moist and they do have a tender texture so the result of using wheat flour didn’t effect mouth feel.

Get your aprons on and get baking.  These will make a delightful breakfast muffin when a donut is overkill.

Makes 12 muffins

  • 2/3 cup whole wheat flour (I suggest white whole wheat)
  • 2/3 cup all purpose flour
  • 1 cup oats
  • 3/4 TBS baking powder
  • 2/3 cup sugar 
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 2 large eggs
  • 1 tsp vanilla
  • 1 cup milk (2% or whole)
  • 1 cup mixed frozen berries
  • 1/3 cup brown sugar

Preheat oven to 400 F.

Spray muffin tins with non stick baking spray

Mix the flours, oats, baking powder, sugar, cinnamon, nutmeg, ginger then make a well in the center.

Add the eggs, vanilla, milk and mix until all is combined.

Gently fold in the frozen berries.

Divide evenly among the muffin cups then top with about 1/2 to 3/4 tsp. of brown sugar on each filled muffin tin.

Bake for 15 minutes or until done.
