It’s nice to relax once in awhile.  Enjoy life. You know?

Biscochitos:  In other words, Mexican Cookies and the State recipe of New Mexico.  It’s a cookie served during the holidays or on special occasions.

It’s a deliciously crisp sugar cookie and perfect to adorn your cookie tray.

Makes 3 – 4 dozen depending on the size of your cookie cutter.

  • 1 1/2 cups unsalted butter or trans fat free margarine
  • 1/2 cup granulated sugar
  • 4 cups all purpose flour
  • 1/2 tsp salt
  • 1 tsp anise seed
  • 1 tsp cinnamon
  • Topping:  2/3 cup sugar + 2 tsp cinnamon

Preheat oven to 400 F.

Cream the sugar and butter.  Add the rest of the ingredients and mix well.

Roll out dough on a floured surface and use your favorite cookie cutter to cut out sugar cookies.

Bake on a lightly greased cookie sheet for 8 – 10 minutes.
