is a deliciously different recipe for easy potatoes. You’ll love it.
Creamy Low Fat Herbed Potatoes
- 12 small new red potatoes
- 2 TBS low fat sour cream
- 2 TBS minced red onion
- 1 tsp salt
- freshly ground black pepper to taste
- 1 TBS chopped fresh dill or parsley
Scrub the potatoes and place into a saucepan. Cover with water and boil. Reduce heat to a simmer and cook until tender, about 15 – 20 minutes.
Drain the potatoes.
Put the spuds into a bowl and add the sour cream and onion. Stir to coat. Add the salt and pepper. Serve warm, sprinkles with dill or parsley.
So creamy.
Wow that onion packs a punch!
