What a roll! I’m partial to spinach and when it’s put into a pizza dough, it becomes a living dream.
The recipe is found on page 9 of Carla Vavala’s book Fusion of Food and Friends. You’ll want to make this one. I used a multi grain pizza dough and it was so good, we couldn’t stop eating it.
Makes one roll which is enough to serve 10 *It freezes well so don’t be afraid to make one large roll, especially with the holidays coming up. It’s a super appetizer!
- 2 TBS olive oil
- 1 lb fresh pizza dough
- 1 large bag fresh baby spinach
- ½ lb fresh sliced mushrooms
- 5 tsp garlic, minced
- ½ cup each, all shredded: provolone cheese, cheddar cheese, gruyere cheese
- ¼ cup shredded parmesan cheese
- ¾ cup aged Gouda cheese
- 1 egg for brushing over the finished formed roll prior to baking.
Preheat oven to 350 F.
Sauté the spinach, mushrooms, garlic in olive oil and drain. Set aside to cool.
Roll out the pizza dough into a large oval or rectangle (about 13 x 9).
Spread the spinach mix over the top, keeping clear from the edges.
Sprinkle with all the cheese then roll up jelly roll style.
Brush the top with egg wash and make sure all ends and edges are sealed.
Place on a lightly greased baking sheet (I used non-stick aluminum foil) and bake for 45 minutes.
Spinach roll, Eggplant roll, Sausage roll, these are all favorites for gatherings and parties.

Roll looks so good…..I’m a big fan of spinach…..earlier this week I too used pizza dough & spinach together but in my case I puredd the spinach & made the fresh pizza dough with it….yes it was green pizza base but it was good….
