I finally found my new desk!
The Elliptical Machine Office Desk! In fact, I said to my business partner “We should both get one and see if we can get a health insurance discount!” Then we saw the price:
$8,000. That will have to go on hold for now.
Ted did suggest that if I got the desk, I’d definitely need the seat cushion to go with it

That’s what I would call the perfect office! I probably wouldn’t worry about cramming my workout into the early morning hours.
Monday’s routine (this is suppose to be the official start of my Philadelphia training): Ran 6 on the mill with 3 miles of tempo. I was going to work my legs and abs but didn’t have it in me so I finished off my run by going outside in the warm and muggy air with Shane for another 5. 11 mile run.
I have a real tough time breaking from my schedule, call me inflexible, so I worked my legs and abs after work then hopped on the bike for a 30 minute easy ride. I’m really trying to get into the Tour next year. By the way, anyone see any women in that race?
Tuesday’s routine: chest & arms, cycle 40 minutes, finish with a 3 1/2 mile run.
SUMMER SALAD
This recipe was based on a super Summer salad suggestion by Chef Cindy Pawlcyn of Mustards Grill in Napa, CA. It’s a meal. It’s a side dish, It’s a perfect summer salad.
Serves – 2
- 3 tsp apple cider vinegar
- 3 tsp balsamic vinegar
- 1 TBS Spicy Honey Mustard
- 1 small green onion, minced
- salt and pepper to taste.
- 1/4 cup EVOO
- 1 cup green beans
- 2 large hard boiled eggs
- 6 cherry tomatoes
- 3 cups mixed salad greens
- 1 TBS fresh chopped tarragon
- 2 oz (1 oz each salad) crumbled goat cheese (or Feta)
In a small bowl, mix the vinegars, mustard, onion, salt and pepper. Slowly pour in the oil and whisk to mix. Set aside.
Trim beans then blanch in slightly salted water. Drain.
Arrange 1 1/2 cups of salad greens on plates, making a hole in the middle of the plate. Put 1/2 cup of the beans in the middle of
the greens (in the hole).
Peel the shell from the eggs and slice. Arrange the egg sliced on top of the beans.
Sprinkle on the cheese.
Drizzle the dressing all over the salad and ENJOY!
We had this salad along side our Vegetarian Lasagna. A perfect meal.

My neighbor gave me lettuce from his garden last night, so I am making that salad for lunch! Looks delish!
Fresh lettuce! You are so lucky. Nothing tastes better than greens right out of the garden.
I’ve seen these types of desks before! We’d all be so much more in shape… too bad for the price! My favorite kind of summer salad would be mixed greens, strawberries, candied pecans, with a light Fig vinaigrette. Perfect for the hot Summer months.
I love the sound of strawberries, candied nuts, and a fig vinaigrette. Delish!
That desk is awesome, wow very pricey but if you weigh the health benefits, it’s so worth it for employers to get this instead of paying for open heart surgery.
My favorite summer salads have fresh greens, avocado, and strawberries or blueberries. The fruit is so cooling and complimentary to creamy avocado. I love goat cheese too but it doesn’t love me back.

My mother makes a wonderful spinach salad that is perfect in the summer. I’m with you on the work desk – that looks like a must have. Too bad it’s out of my price range too. 🙁
