We have so much activity in our back yard, the camera should always be at the ready.

Mom deer had a baby.

They must consider our yard the “safe zone” because Mom and Babe are always hanging around.

On this particular night, Ted had just stopped the lawn mower, while Mom and Babe were watching behind the trees. They stood still as Ted made his way across the yard. I came out the door and Mom began walking towards the woods.  Babe was very busy sniffing around, until Mom said the word and …ZING!  He was off!

We have a couple of fox that don’t feel threatened by us either.  This morning, they walked very close to the house and down the garden path, just like they owned the place.

I love seeing all the animals in our yard but I’m afraid that Shane will catch sight of them while outside and take off in hot pursuit.

Macaroni Salad

Simple but good with less fat and more nutrition. *Make sure to use a whole wheat or protein Plus macaroni noodle.

Makes 6 – 8 Servings

· ½ box nutritionally packed macaroni product – cook according to package directions and let cool.

· ¾ cup Greek Non-Fat yogurt

· 1 TBS sugar

· 2 TBS balsamic vinegar

· 3 TBS honey-spice mustard

· 2 tsp salt

· 2 tsp pepper

· 2 stalks celery – chopped

· 3 green onions – chopped

· 1 carrot, sliced thin

Mix the yogurt, sugar, vinegar, mustard, salt, and pepper in a bowl.

Add the celery, onions, and carrots.

Add the cooled macaroni. Stir to mix thoroughly.

Chill for 4 hours or overnight. Stir and serve.
