A couple of things before we talk about another Payard recipe.

Second, running ramblings: It dawned on me the other day why Shane had so much energy doing a 9 mile run then a 7 mile run. Not only is the weather cooler, but he has been on a taper! For the entire month of October, while Ted and I have been on and off planes to Kansas and Florida, Shane has been kicking back with walking, some frisbee playing but no road runs. Well, now his fun is over. He’s training with me every day.
Today, I started on the T/M with a 3 1/2 mile warm up. Went into some heavier leg workout which took about 40 minutes. Shane and I went out the door at about 5:15 am and ran 4 miles. No need for the water bottle because it was under an hour and the weather was pretty cool. Great start to the work week.

The recipe was suppose to be posted on the 30th of October but it’s been a busy week so there were delays. It’s here now and definitely recommended. This ranks as one of Francois’ easier recipes.

Francois describes these as “spongy cookies” and a “perfect complement to a hot cup of tea or coffee…”. The final cookies should be light. Francois further recommends they be eaten the same day. Not sure why because we enjoyed ours for 3 days following. They were perfect.
As you can see, I didn’t stick with just the mini Madeliene tins. I also used mini tart tins for larger cookies.
