Speaking of Yoga…Yogi…

Remember a couple of weeks ago I thought a cold was coming on.  It lasted about a day with a scratchy throat that lasted a little longer.  The best care for a troublesome throat is Yogi Tea: Honey Lemon.

Give me coffee over tea any day but when I’m not up to snuff, it’s hot tea all the way.

Yogi Tea even has a Green Tea for Muscle Recovery. I better get some of that!

Salmon en vertu de Yogurt

That’s the best of my French.  It sounded so much better in French than English …..“Salmon Under Yogurt” vs “Salmon en vertu de Yogurt”???? Don’t you agree?

  • 1 large salmon steak, 1 lbs.
  • 1/4 cup Non Fat Plain Greek Style yogurt
  • 1/4 cup fresh cilantro (if you don’t like cilantro, use Italian parsley for a milder flavor), chopped
  • 1 garlic clove, minced
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cumin
  • 1/4 tsp paprika
  • Juice and zest of 1/2 a small lime
  • 2 TBS grated Asiago cheese (I used Parmesan but it needed a little more so I recommend Asiago cheese)
  • Salt and pepper to taste.

Preheat the grill on high heat.

Mix the yogurt, cilantro/parsley, garlic, ginger, cumin, paprika, lime, and cheese together.

Prepare a piece of aluminum foil by making a few holes in it.  Place the salmon, skin side down on the foil.  Sprinkle with salt and pepper the spread the yogurt sauce on the salmon.

Cook on the foil and on the pre-heated grill (medium high heat) for about 6 minutes, skin side down then turn so the topping is on the foil and continue cooking another 7 minutes or until salmon is cooked through.DSC_5801

Make sure you use the freshest salmon you can find.  If not, you’ll find this dish will lack flavor.

Don’t over cook it.  Ted grilled it one minute too many for his liking.  I would prefer my fish over done rather than under done so it was fine for me.  If I put fish in my mouth that is the least bit under cooked, it puts me off my entire dinner.
