I have a very easy way to bake haddock. I had never baked haddock before and the man at the fish store gave me this recipe. It is so easy and soooooooo good!!
Page 73: Baked Haddock
The measurements are the amounts used by Apple Crumbles (to serve 2). Experiment to suit your own taste preferences.
- 1 lb Fresh Haddock
- 1 to 2 TBS olive oil (or melted butter)
- 3 TBS bread crumbs
- 1 TBS chopped fresh Italian Parsley
- 1 TBS chopped fresh Oregano
- 1/2 tsp salt
- 1/4 tsp fresh ground black pepper
- 1/2 lemon- for juice and garnish
Preheat oven to 400 F.
Place the haddock in a backing dish and rub with the oil or butter.
Sprinkle with salt and pepper or add the salt and pepper to the bread crumb mix.
Mix the breadcrumbs with the herbs and seasoning and sprinkle on top of the fish.
Put in the oven for 20 minutes. Squeeze with fresh lemon juice.
I usually “spice up” the store bought breadcrumbs with some extra parsley, oregano or whatever you like. …. Squeeze some fresh lemon over it and it is fabulous!!
We have to agree with Evita, it was FABULOUS!! (and that’s with 2 exclamation marks!..!)
If you have never baked fish before or have a fear of doing so, try this recipe. It’s a no fail recipe.

Haddock seems to be the most common fish around here.

Joanne, this looks fabulous. I’ve never baked haddock before (or cooked with it at all for that matter) but now that I have this recipe and I’ve seen these photographs, I can’t wait to give it a try!
