Posted by Evita, she says…

I have a very easy way to bake haddock.  I had never baked haddock before and the man at the fish store gave me this recipe.  It is so easy and soooooooo good!!

The measurements are the amounts used by Apple Crumbles (to serve 2).  Experiment to suit your own taste preferences.

  • 1 lb Fresh Haddock
  • 1 to 2 TBS olive oil  (or melted butter)
  • 3 TBS bread crumbs
  • 1 TBS chopped fresh Italian Parsley
  • 1 TBS chopped fresh Oregano
  • 1/2 tsp salt
  • 1/4 tsp fresh ground black pepper
  • 1/2 lemon- for juice and garnish

Preheat oven to 400 F.

Place the haddock in a backing dish and rub with the oil or butter.

Sprinkle with salt and pepper or add the salt and pepper to the bread crumb mix.

Mix the breadcrumbs with the herbs and seasoning and sprinkle on top of the fish.

Put in the oven for 20 minutes.  Squeeze with fresh lemon juice.

I usually “spice up” the store bought breadcrumbs with some extra parsley, oregano or whatever you like.  …. Squeeze some fresh lemon over it and it is fabulous!!
