First, let me tell all Vegans out there that this is not a Vegan post….no really, that’s not what I wanted to tell you…. but it isn’t a Vegan post. What I wanted to tell you is… there is a terrific new APP for the iphone called the Vegan Recipe Finder. This is also good for all you “Meatless Monday” bloggers as well.
More than 13,000 vegan recipes and more added daily. What a find!
This week on cooking with Ellie..
The original recipe uses CHICKEN and was chosen by Danica of Danica’s Daily. I could not resist two beautiful tuna steaks available fresh from our fish guy so I went with tuna instead of chicken. Make sure to check with Danica to see a beautiful presentation of this recipe.

The ingredients I used: 2 lbs of tuna instead of chicken. The tuna was rubbed with a grill seasoning and drizzled with fresh lime juice before hitting the grill. 1 pint of cherry tomatoes instead of 2 pints of grape tomatoes. I used 1 cup of corn and 1 cup of peas and carrots. The rest of the ingredients looked really good to me so no changes needed.
While Ted was grilling, I heated olive oil in a pan over medium heat and added the salad ingredients to cook and serve along side of the tuna.
I’m sure I’ve said this before, but this time I really mean it: This is one of Ellie’s best ALL TIME recipes. That will make a reappearance time and again on our table.

Your salad just wows me! I think you REALLY liked this. . am I right? 🙂 The tuna steaks look good too. I wish I liked seafood more and that I wasn’t so allergic to shellfish. I used to really love shrimp. Oh well. . life moves on. I enjoyed making this as well as eating it! Hope you have a wonderful weekend.

I remember someone at work bringing in an Ellie shrimp dish but forgot about your
allergy to shrimp. That was a while ago.
I don’t know what I’d eat if I was allergic to seafood 🙁
I had used to be allergic to corn but now if I eat it in moderation (when I was a kid,
it was total pig out time when we had corn on the cob), I’m ok with it.
I like the mixture of all of those vegetables.

WOW ~ Talk about my presentation, no no, look at yours! AMAZING!!! LOVE your pictures and your tuna steak change….I bet this recipe would be EVEN better with tuna!
You could make it VEGAN by using Tofu or another vegan meatless dish or better yet – Grill up some spicy potatoes with it.

Wow! This is a stunner. Those fresh vegetables serve as a beautiful bed for your tuna steaks. My husband and I will occasionally eat fish (no meat for us) and I’m certain we would be very satisfied with plate as beautiful and delicious as this!
Looks great. Unfortunately, I am up at Purdue at USA swimming sectionals with Matt this week and this recipe did not get made before I left. I hope to get to it when we return…the inspiring photos here make me want to get home that much sooner! YUM!

What a great salad to pair with tuna…honestly though I am sure it would be a welcomed side dish to most meals!
I honestly thought of using Salmon so since it was good with tuna that will be my next try. Looks delicious. And so wonderfully colorful.
Isn’t this just wonderful. We love Ellie’s recipes. I used chicken but I would like to try this with salmon. This is just filled with color and flavor. Yours is majestic.
