What is the latest challenge or goal you have set for yourself?  DO YOU set goals for yourself? 

It’s important to have goals to work towards.  Here is a great site for the FIVE Golden Rules of Goal Setting.  In summary, here they are: 

  • Set motivational goals
  • Set S M A R T goals:  specific, measurable, attainable, relevant, time bound.
  • Put the goals in writing
  • Have an plan of action
  • Stick with it.

As you know by now, my goal is to run a marathon on October 3rd.  I’m working towards it with every run.  Sure there are days I don’t want to run, but I say to myself, “this is just a short part of the rest of my day, I can do this”.  In the long term, my thoughts are “after October, you will have completed your work and can take a break if you want to ”.  Some how, those words keep me going.  They aren’t brilliant. They probably would do nothing to motivate anyone else, but they work for me.  When the going gets tough, is there a specific saying that you repeat in your mind to help you through?

Today’s Workout
My alarm went off.  I got out of bed then got back into bed.  My back is still giving me a bit  of grief this week.  I did do a gentle workout with weights but paid close attention to any additional back pain or spasms.  The weights seem to do it some good.

 The run.  We went for a 5 mile run around the parks.  It would have been a good run: nice morning, 60 degrees, no rain, little breeze.  Turning down the road to head home, doesn’t a BUG fly into my mouth.

It went right down my throat.  Choking, gagging, making obnoxious throat clearing noises, I went rushing into the house. The water didn’t wash it down. It felt like that thing was scrambling to get back out the way it came! I grabbed a couple of nuts and raisins thinking the coarseness of food would force it down.  I’m not sure that helped either. As I sit here typing, my throat is still tickling.  Hope that bug didn’t leave a wing or something in there?! 

Grilled Tofu Burgers

Sometimes when I make tofu, I have to admit, it comes out tasting pretty bland.  Those are the meals you guys DON’T see or hear about.  This time…THIS recipe has got to be one of the most enjoyable.  Not only because I didn’t have to cook (Ted grilled the tofu outside and avoided touching the Tofu Burgers with his greasy hamburger spatula like they were the plague)  but also because the result was such a good, firm texture.  The grill flavor helped a lot as well.

Easy as mix, chill, grill. That’s it. Oh! I forgot…ENJOY!

Textured Veg Protein 

  • 1 TBS minced dried onion
  • 1 tsp parsley
  • 1/2 TBS Italian seasoning
  • 1/2 tsp garlic powder
  • 1 TBS BBQ sauce
  • 1 TBS Honey mustard

Mix all the above together and form into patties. Put the patties on an olive oil greased piece of foil. Chill in fridge for at least 20 minutes.  With grill on medium high heat, grill each side approximately 5 minutes per side. Make sure you grill on the foil.

A good firm texture and that wonderful barbequed taste. Great way to cook with tofu!

Served on a 100% whole wheat hard roll. *Healthy Tip:  Eat only half of the roll and MORE TOFU BURGER!
