First things first:  Exercise.  You have to work out if you want to eat the goodies.  Right?!

Monday’s workout: 30 minute Treadmill run with 6 strides after the 30 minutes of 45 seconds to 1 minute each, resting  40 to 50 seconds in between.  Total miles =4.6 at average pace of 8.39.  Weights = chest and arms.  Walk with Shane for 3.3 miles.  He’ll run with me tomorrow.  I think he was really beat after our 9 miler on Saturday so I’m giving him two days off from running.  He’ll hit the road with me Tuesday.

The Reese’s Peanut Butter Cup Pie

  • 6 packages of Reese’s Peanut Butter Cups (total of 12 peanut butter cups) – packaging removed
  • 1 8 oz package cream cheese-room temperature
  • 1 ready made graham cracker pie crust or make your own by mixing 1 cup graham cracker crumbs with 2 TBS sugar and 1/4 cup melted butter. Press into a pie pan and bake at 350 F for 10 minutes. Let cool).
  • 1 cup heavy cream
  • 2 TBS powdered sugar
  • 2 TBS Dream Whip or other whip cream stabilizer

Put the Reese’s Peanut Butter cups in a double boiler set on medium heat and allow to melt. They don’t have to be totally melted but just enough so you will be able to whip them smooth.

Allow the melted PB cups to cool slightly, then add the cream cheese and whip until smooth.

Pour into the graham cracker crust and chill at least 2 hours.

Pour the well chilled heavy cream into a glass bowl. Add the stabilizer and the sugar and whip until stiff peaks form.

Spread on top of the Reeses Peanut butter – cream cheese filling.  Top with Reese’s Pieces or other decoration and enjoy!

There are no claims here, what so ever, as to this being a healthy dessert.  It’s just one of those sweet treats when you feel you’ve been exceptionally good with healthy eating and you deserve a small slice of …. Xanadu.
