This weeks CEimB recipe is Soft Asian Summer Rolls with Sweet and Savory Dipping Sauce. It was chosen by Teresa of A Blog About Food. Cute blog and a definite must see.
What an interesting combination of flavors. The mint and the basil all rolled up with carrots and (should have been shrimp) soy crumbles, topped with a spicy-sweet dipping sauce. Wow this recipe was good.
As I said, the original recipe uses shrimp and rice-paper rounds. I used Meatless Soy Crumbles.
I used all my shrimp over the weekend and didn’t have time to get any more.
I liked the look of the Nutritional facts better on the soy wrappers than the rice paper.
I also liked the variety of colors better … or maybe I was just feeling rebellious.
For the dipping sauce, I used honey mustard instead of sugar. All other ingredients were unchanged.
Almost forgot, one other change was another ingredient inside the rolls: instead of Thai rice noodles, I used Mung Bean Threads. This was the only ingredient I wasn’t thrilled with. The bean threads were slimy and didn’t add much to the summer roll.
We ate all but one wrap between the two of us so you know they were a hit. I would try these again using shrimp. The mint and the basil with the shrimp would be such a nice compilation of flavor.

For a while I used to make these amazing fresh spring rolls out of a Cooking Light magazine. This reminds me of those. I need to dig that recipe out…hope I still have it. These look so great! I still have yet to try the chili con crab but I have all the ingredients. Hopefully this weekend!

Love those colorful wrappers! I think I soaked my rice paper too long; plus, I think the shrimp would have helped a lot with a bit more flavor. Oh, well. Since I have SEVERAL rice paper rounds left, I guess I can experiment again 🙂

I have a bunch of these soy wrappers sitting in my pantry too, butI just haven’t been able to bring myself to use them since I actually love nori! This is a great alternate use for them though, I’ll definitely have to try using them to make spring rolls.
