Family walk this morning.  It was a rest day for all of us.  No running, no cross training, no weights. We went for a nice 4 mile walk with Shane.  The morning was a mild 43 degrees until we turned to head home.  The wind picked and chilled our faces. 

Still undecided on running distance tomorrow. The forecast says “showers likely”.

The temperatures don’t look that great either but at least they aren’t in the teens.

Easy Eats:

Scallops are one of the easiest meals to put on the table.  If you are short on time, cook scallops.

  • 1 lb Sea Scallops – rinse and pat really dry
  • 2 TBS olive oil
  • 4 strips of Morning Star Farms Soy Bacon (or use Turkey bacon if you eat meat) – sliced

  • 1 small green onion – chopped, reserving the green part for garnish.
  • Pepper and salt

Heat 1 TBS of olive oil over medium high heat. When the oil is hot, add the soy bacon and white part of the chopped onion.  Cook for 2 –3  minutes.  Add the mushrooms and cook another 3 – 4 minutes.  Remove to a plate and set aside.

Salt and pepper your scallops.  Add 1 TBS of oil to the hot pan and add your scallops.  Cook 3 –4 minutes on one side, turn over and cook 3 – 4 more minutes.  During the last minute of cooking, add the mushroom mixture back to your hot pan of scallops and stir around.  Serve topped with the green part of the chopped onion.
