Just another Waffle Weekday

by Joanne on February 24, 2010

Beautiful Winter Wonderland!  Through my eyes as Shane and I set out on our early morning walk…

As Ted said, “It’s like being in a picture.”  No wind. 37 degrees. A lot of snow. Couldn’t be better for a day in February.

Sing it like the song…”Just another Manic Monday”, by the Bangles….

Six o’clock already, I was just in the middle of a dream
I was kissin’ Valentino, By a crystal blue Italian stream
But I can’t be late , ‘Cause then I guess I just won’t get paid
These are the days, When you wish your bed was already made…It’s just another [WAFFLE WEEKDAY]
I wish it were Sunday, ‘Cause that’s my funday
My I don’t have to runday, It’s just another [WAFFLE WEEKDAY]
Have to catch an early train, Got to be to work by nine
And if I had an air-o-plane, I still couldn’t make it on time
‘Cause it takes me so long, Just to figure out what I’m gonna wear, Blame it on the train, But the boss is already there
It’s just another [WAFFLE WEEKDAY], I wish it were Sunday, ‘Cause that’s my funday, My I don’t have to runday, It’s just another [WAFFLE WEEKDAY]
All of the nights , Why did my lover have to pick last night
To get down, Doesn’t it matter, That I have to feed the both of us, Employment’s down , He tells me in his bedroom voice
C’mon honey, let’s go make some noise, Time it goes so fast
When you’re having fun, It’s just another [WAFFLE WEEKDAY] I wish it were Sunday, ‘Cause that’s my funday
My I don’t have to runday, It’s just another [WAFFLE WEEKDAY] I wish it was Sunday, ‘Cause that’s my funday
It’s just another [WAFFLE WEEKDAY]

No Mess Pumpkin Waffles:  No mess because you mix everything in a bag then toss the bag into the garbage.  No bowls to clean up, only your waffle grill to wipe clean.

  • 1/2 cup all purpose flour
  • 1 cup whole wheat flour
  • 3/4 cup quick cooking oats
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • pinch salt
  • 1 TBS brown sugar
  • 3/4 cup Reduced fat milk (or more if you want them thinner)
  • 2 eggs, beaten
  • 1/2 cup 100% pumpkin puree

Add all the ingredients to a sealable plastic bag.

Get as much air out of the bag as possible then shake it, knead it, squeeze it, play with it for 5 or 10 minutes.  Make sure it is all mixed up (no flour showing).

Heat up the waffle iron or waffle grill that has been sprayed lightly with non-stick cooking spray.

When ready to make the waffles and using a pair of scissors, clip about  1 1/2” to 2”  off one corner of the bag.   DSC_3681

Squeeze about a 1/4 cup or so onto the waffle grill, DSC_3682

it is kind of thick so spread it around with a spoon.

Cook about 5 minutes.

Waffles or Pancakes? What’s your choice?

Looks like a great recipe and I love the idea of mixing it all up in a bag and piping out individual waffles. I prefer waffles but don’t have an awesome waffle maker so we defer pancakes.

Haven’t been able to find pumpkin at Hannaford since before Thanksgiving. Where did you find yours?

Pam: You should try the Big Boss Grill. We love it!

Bonnie: Hannafords in Washington Mills has it.

I totally thought of Manic Monday when I first read the title! I am definitely a pancake girl. Although, I rarely eat either.

The snow is so beautiful on the trees!

Kilax: I know… I wrote the title then started humming it. Crazy!

Anna: No one likes clean up. It’s kind of fun playing with the goo in the bag as it mixes up 🙂

I love how you use the bag to mix the batter and squeeze it onto the waffle iron. Beautiful winter photo too. We haven’t had a snow fall like that in my home town this winter.
