Here is a good, healthy Frittata Recipe that makes me VERY Happy, what about you?

Lobster Frittata with Caramelized Onions and Zucchini

  • 8 oz cooked lobster meat
  • 1 medium onion, chopped
  • 1 small zucchini, sliced into 1/4 inch rounds
  • 1 TBS olive oil
  • 4 whole eggs + 1 cup Egg Beaters
  • 4 TBS Asiago Cheese, shredded or 2 TBS grated cheese your choice
  • 1 tsp dried parsley (fresh would be best if you have it = about 1 TBS fresh)
  • salt and pepper to taste

Preheat the oven to 425 F.

Heat a large pan over low heat and add 1 TBS oil.  When hot, add the onion and zucchini. Cook for 10 minutes.  Stir in the parsley.  If you haven’t prepared the egg mixture yet, remove from heat and set aside.

Whip the eggs and beaters in with the cheese.  Stir in the lobster, season with salt and pepper.  I added  15 grinds of pepper and 10 grinds of sea salt.

Arrange the zucchini and onions evenly in the bottom of the  pan and pour the egg mixture over the onion and zucchini.  Turn the heat on medium high and cook about 3 minutes.

Place the pan directly into the oven and bake for approximately 15 minutes or until set.  Remove from oven and let sit 3 – 5 minutes before slicing.  This is also an excellent dish served cold.

About 4 to 6 servings for a complete dinner.
