This is a cookie that has all the healthy breakfast options EXCEPT eggs.  It is mixed together the night before and in the morning you will simply preheat your oven, bake the cookie for 12 to 15 minutes, make the house smell DELICIOUS, and have a great “on the go” meal.

Oatmeal and Fruit Breakfast Cookie

  • 2 sticks Promise margarine (or other heart healthy butter substitute)
  • 4 TBS Unsweetened Apple sauce
  • 3/4 cup Dark Brown Sugar
  • 1 cup crushed pineapple packed in juice and drained
  • 1 tsp vanilla extract
  • 1/2 TBS real maple syrup
  • 1 1/3 cup Whole Wheat Flour
  • 2/3 cup All Purpose Flour
  • 1/2 cup Non Fat Dry Milk Powder
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup Oatmeal
  • 1 cup raisins (or craisins or chopped dates)
  • 1/2 cup chopped walnuts (or other favorite nut)

Cream together the margarine, applesauce and sugar.  Add the pineapple and mix.  Add the vanilla and maple syrup. Set aside.

Mix together the whole wheat flour, the all purpose flour, the dry milk powder, cinnamon, baking soda, and salt.  Add this to the creamed mixture and mix just to combine. Add the oatmeal and mix.  Now gently stir in your raisins and nuts.

Cover and place in the fridge until tomorrow morning. Line baking sheets with foil for easy clean up, spray lightly with non stick spray.  DSC_1574

and bake at 350 F for 12 to 15 minutes or speed your morning baking up a bit by using your convection oven at 325 F for 10 to 12 minutes.

If you make 50 cookies (dropping about 1 TBS of dough on the sheet for baking), the approximate nutrition is:  92 calories. 2 g Protein. 13 g Carbs. 4.2 g Fat.  1 g Fiber. 90 mg sodium

If you make 25 cookies:  184 calories. 4 g Protein. 24 g Carbs. 8.4 g Fat. 2 g Fiber. 180 mg sodium
