Too Early for Soup

At 8:22 AM this morning, after downloading all the work email, my mind starting drifting toward Cream of Asparagus soup.  Odd?  You bet.  It was obvious what dinner was going to be tonight.


Cream of Asparagus Soup (2 – 3 servings)

  • 1 lb Asparagus –  Just trim off the tough root ends.
  • 4 green onions – chopped
  • 1 TBS SmartBalance Light
  • 2 1/2 cups Vegetable Broth
  • 16 oz Silken soft Tofu – drain.
  • 1/2 TBS lemon juice
  • 1 tsp white pepper (white pepper allows adding the flavor without seeing it in your soup. Black pepper is certainly an allowable substitute but you will see it in your creamy soup).
  • Salt to taste
  • 1/4 red onion – for garnish (optional)

Keep 2 asparagus stalks for garnish – simply wash, sprinkle lightly with salt and lemon and set aside.  Cut the rest of the asparagus in quarters.

Heat a sauté pan and add the SmartBalance over medium-low heat.  Sauté the green onion with the asparagus about 5 minutes.  Add the broth, white pepper, and tofu (squeeze between your hands, adding it to the pan), bring to a boil, reduce to simmer and cook for 20 minutes.

Remove from heat and puree in food processor until smooth. Add back to pan, do a taste test, add salt if necessary, add the lemon juice at this time and bring back to a boil.  Serve immediately (it will separate) topped with finely chopped red onion (about 2 tsp per serving). *If the soup does separate, simply whip it really quick with the immersion blender.

Really cool finds…

I have some great jewelry.  Usually I wear one of 3 necklaces, although I have more than 2 dozen.  I have rings on 3 fingers, although I have enough rings for all fingers and toes…and then some.  I have earrings in countless numbers.  Bracelets, I hardly ever wear but have a few of them.  The bracelets being the point of all this.  I found this treasure in one of my jewelry drawers:
