This is a healthy twist on French toast. One slice will fill you up and give you plenty of energy and protein to take you to a healthy lunch.
We started with a terrific new bread discovered just this week: Nature’s Pride 100% Natural 12 Grain.
It is nutty, soft, and has a balanced flavor so you’re not biting into an overly sweet piece of bread nor are you tasting a bread that is rough and almost tasteless. It’s a bread you can do so much with, from a simple lunch sandwich to the following French toast that is rich with fresh apple flavor but not over sweetened. The bread stays firm yet moist and soft through out the entire French toast making process. Have you ever used bread that just rips apart after soaking in the eggs? Not this one. The 12 Grain was perfect for this delightful breakfast.
Apple Maple French Toast
- 6 eggs
- 2 apples – peeled and cored
- 1/2 cup milk
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- pinch all spice
- 3 TBS lemon juice
- 3 TBS water
- 3 TBS Real Maple Syrup
- 3 or more TBS Smart Balance Butter spread
- 12 slices Nature’s Price 12 Grain Bread
Peel and dice one apple. Put the apple into a pot on the stove with 3 TBS lemon juice and 3 TBS water.
Bring to a boil. Cover and reduce the heat to a simmer. Let simmer 15 minutes. For the last 5 minutes, uncover and let slow boil. When done, add 3 TBS maple syrup and keep warm.*Note: If you enjoy more syrup, double this recipe for the apple-maple syrup.
In a dish, crack the eggs, add the milk, cinnamon, nutmeg, and allspice.
Add your Nature’s Pride bread, dousing in the egg completely.
Heat large frying pans on medium heat. Add Smart Balance (about 1 TBS to cook each batch of toast). Let melt. When hot, add bread to pan. Do not over crowd. Let cook 3 minutes.
In the meantime, using your 2nd apple, peel and core, cut into slices.
When the bread has cooked 3 min. on first side, add about 2 apple slices per piece of bread in the pan. Turn over the bread to let cook on the other side with the apple slices.
After 3 minutes, remove to a plate.
Serve with 2 TBS of the apple maple syrup and about 2 slices of fried apple.
