What a busy day.  How about you guys?  It was crazy GOOD at work today.  The hours fly by when your so busy.

I just have to share the following recipe with you.  Crazy Delicious to go with my Crazy day! 

When I got the monthly fruit delivery from Harry and David, I glanced at the little leaflet that accompanies the fruit.  A recipe jumped out at me and grabbed at my wheels of creativity.  Of course I couldn’t just follow their delicious looking suggestion.  I took one peach, one nectarine, looked at the over ripe bananas on the counter and wondered.  This is what came from those moments of deep thought.

Mixed Fruit Cheesecake Pie

  • 1 unbaked deep dish 9” pie shell
  • 1 peach – peeled and sliced
  • 1 nectarine – peeled and sliced
  • 1 overripe banana – sliced
  • 3 eggs
  • 2 TBS half and half
  • 1 cup powdered sugar
  • (1) 8oz pkg. Neufchatel cheese (or cream cheese)
  • ½ tsp lemon peel
  • 1 tsp lemon juice
  • 1 tsp ground ginger

Preheat the oven to 375 F.  Place the sliced peach and nectarine on the bottom of the unbaked shell. Place the slices of banana on top of the other fruit slices.   Beat 2 of the eggs with the half and half and ¾ cup of the powdered sugar.   Pour this over the fruit.

Beat the cheese with the peel, juice, ginger, egg, and ¼ cup of the powdered sugar.  Carefully pour then spread over the half and half mixture and fruit already in the pie shell.

Bake for 55 minutes. Cool completely before slicing.
