We returned home from celebrating brother-in-law Eddie’s 60thbirthday about mid afternoon. It was a long night with plenty of partying, dancing, laughing and too much fun.  I’ll post some of the pictures within the next few days but today, I’m a bit tired.   What I will offer is a sneak peak at the glorious cake prepared for Eddie:

Since my parents are heading back down to South Carolina Wednesday, we decided to have a small family gathering.  I’m not sure what I’ll muster up the energy to cook, but one tasty dish that is definitely on the menu is this weeks CNY Eats from “A Taste Of Utica” cookbook and that dish is Horned Dorset Dip by Rainie Piccione.   Really easy.  Super good.

Horned Dorset Dip – Enough for a Gathering

  • 1 cup Mayonnaise (I used a Vegi-Based Sandwich Spread by Nasoya)
  • 1 cup chopped onion
  • 1 cup grated sharp cheddar cheese
  • Assorted crackers and or breads, vegetables

Note:  I mixed everything together, covered and then baked when everyone had arrived at the house.

Preheat oven 350 F.  Mix together, in an oven proof dish, all of the above except the crackers, bread, crudites.  Bake in the oven for 20 minutes and serve warm.
