Saturday Night Dining at Home

 My mother doesn’t like fish.  It really is a shame when there are so many options for fresh seafood within 10 miles in every direction of the house.  Since she doesn’t like seafood, but knows the health values of it, having it in the freezer makes her feel good.  Hence: Schwann’s.  Apparently Schwann’s sells Mahi Mahi now.  It is in a box and wrapped in single serve portions. 

 Now don’t get me wrong, my mother is one fantastic cook. But not with items she doesn’t like.  If you were to eat a traditional old English meal of Roast Beef, Yorkshire pudding with Gravy at her table, you would think it came from a five star restaurant.  Mum just doesn’t enjoy cooking anymore and certainly not things she can’t appreciate the taste of.   So tonight’s meal of Grilled Mahi Mahi wasn’t too bad even though it was frozen….from Schwann.  The fish was placed in a marinade of lemon juice, olive oil and a little salt and pepper for about 1/2 hour before grilling.  Under my mother’s insistence, the fish was grilled for 20 minutes. Well that was WAY too long…but we didn’t argue because….well….she agreed to eat it anyway.  Mum likes most everything cooked beyond recognition, that includes fish. She thinks if she cooks the heck out of it, she won’t taste it…that is SO true.  Really bad:9795  She ended up eating 2 bites of the fish and finished the vegetable. Oh well.

Susan wanted fresh brussel sprouts cooked the way she had seen them on this blog in the past. So we trimmed the sprouts, cut them in 1/2 and boiled them for 5 minutes.  We brushed a sheet of aluminum foil with EVOO, put the drained and dried brussels on top, sprinkled with some garlic-herb seasoning and added pepper, and grilled for 20 minutes.  These were of course a huge hit with everyone.

I was a bit hungry so my first course was a spinach salad with some broccoli slaw, a tomato, and fat free feta cheese.  The dressing was sun dried tomato vinaigrette.

I ate a lot of Brussels and the fish…also finishing Mum’s left over fish.  Ok. Instead of a “bit” hungry I was a LOT hungry. 

 After dinner, Shane and I went for a walk around Heritage. It really hadn’t cooled down much.  We also went alligator hunting but didn’t see any…only snapping turtles.

 Mother’s Day – Sunday

 Today was a little cooler. I didn’t check the temperature but it was certainly easier going on our morning trek.  We did a little more running this morning and went for 5.3 miles.  We played frisbee and some ball in the yard.  We also played ball in the house which turned out to be not such a great idea since Shane ended up braking a carousel my mother had on display.  Whoops!

 Mother’s Day Brunch at Pawleys Plantation

 Brunch was very good. The restaurant was comfortably full. Mum and Sue were given a red and a white carnation for Mother’s Day upon entering the restaurant.  We all enjoyed a glass of wine with dinner, Riesling and Sauvignon Blanc.

 The first room to the food was there simply to entice your taste buds because it was the dessert display. There were pies, cobblers, pastries… no need to eat anything else right?  These were two of my favorites but I never tasted any because I filled up on other food.  Carrot Cake and Key Lime Pie…..

For my meal I tasted the grits…these were very good. Super creamy (I’m not big on “creamy” but these were good) and somewhat sweet.  Garlic broccoli, haddock with a sun dried tomato dip/sauce on the side, red roasted potatoes, Eggs Benedict (had to dissect this due to the ham in the middle (BLAH!)).

Of course a wonderful crisp, fresh salad, and my favorite…all sorts of breads. A wonderful brunch enjoyed by all of us.

Tonight we are having a very light dinner. I have planned a beet salad with frisee, goat cheese, in a vidalia onion vinaigrette.  Sue and Dad will have sauteed turkey bacon wrapped scallops, mine will be plain, and Mum will have a pan fried crab cake.  Details tomorrow.
