Hope your Monday was a good one?  Mine was okay for Monday.  Monday’s get such a bad rap, don’t they?  It’s a day when all dentist appointments should be scheduled because that way, the appointment doesn’t ruin a better day of the week, like a Thursday.  Ever notice that people at work begin getting a little more cheerful around Wednesday afternoon, Thursday morning?  On Friday, everyone is wearing a smile.  We just LUV our weekends!

What to do for a Monday dinner?  I followed someone elses recipe for a Frittata. It didn’t work out for me because instead of using the 9 x 9 dish as suggested, I used my great big, high sided stove top pan that I would typically saute the ingredients then put directly into the oven.  It was too large of a diameter and consequently, the Frittata remained flat and overcooked.  The original recipe can be found at Danzante Wines and make sure you cook in that 9 x 9 dish so it will be thick and moist.

I boiled some green beans with a little salt, pepper and parsley.

I added some nice hot salsa because, as I said, the dish turned out a bit dry and needed some more flavor.
