It was a Monday that’s for sure.  However – the sun did shine and was a bit deceiving since it didn’t get much above 38 degrees.  Still  – grab the Vitamin D when you can at this time of year in the North East.

After work, Shane and I went for a walk around the block. He really wanted to terrorize the white dog on the corner but, to Shane’s disappointment, the dog wasn’t outside today.  Shane was ready for him as well. Bummer.  We did see a Gent. walking along who said “You have to enjoy every bit of it while you can”… he meant the sunshine of course.  On  a positive note, the sun isn’t going down until about 5:30 pm. That is SO nice not having to leave work in the dark.

I read some reviews of various peanut butters today at Peanut ButterBoy’s blog and decided I would try the powdered peanut butter. It completely intrigued me.  Pam had mentioned it some months ago.  I ordered the plain and the chocolate. Can’t wait to try them out!

What’s for dinner?  Dinner tonight is Tofu Scramble. I based my recipe on one taken from SparkPeople referencing, http://www.GoVegan.net.

My recipe was as follows:

  • 1 spring onion, chopped
  • 3 baby bella mushrooms, sliced
  • 2 celery stalks, diced
  • drizzle EVOO for the bottom of the pan
  • 1 14 oz pkg. Lite Firm Tofu, pressed to get the moisture out and cut into little squares.
  • 2 tsp curry powder
  • salt and pepper to taste.
  • 2 TBS Salsa
  • 1/4 cup raisins

In a large pan, heat oil on medium high and add first 3 ingredients. Cook about 3 minutes. Turn down heat to medium and add tofu, curry powder, salt and pepper. Cook for about 15 minutes. Stir frequently.  Add salsa and raisins. Heat about 2 minutes and serve.

On the side, we had oven roasted vegetables:  400 degrees. Slice 1 small zucchini, 1 small yellow squash, and 6 asparagus spears. Drizzle with EVOO, add curry powder, salt and pepper to taste. Roast uncovered about 50 minutes.

Also – added green beans.  Gotta have them beans!

I’m hoping to relax and fall asleep early tonight.  It would be nice to read a bit, but I’m not so sure my eyes would stay open for more than 15 minutes.
