First of all, I have to say I have such great admiration for John Travolta and his accomplishments and contributions, I feel so much sorrow for his tremendous loss and hope that somehow he can come to terms with this in a way that is best for him and his family.  It absolutely breaks my heart to hear about the loss of children and loved ones.  God bless and peace be with them all.

Groceries:

The results of our grocery trip was a definite reduction to our bank account. The end result of trying to eat healthy and clean.  We might live longer but we’ll have no money to do anything with.  9824

Unbelievable as it may seem, I was ready to eat upon return from the grocery store. Since I had 1/2 of an Ezekiel English Muffin left from yesterday’s breakfast, I decided to make a mini pizza out of it.

What did this little beauty consist of? Well let me tell…

  • 1/2 Ezekiel English Muffin
  • 1 TBS Fire Roasted Salsa
  • Left Over Tempeh Slices
  • 1 TBS Cabot’s 50% Reduced Fat Shredded Cheddar

I toasted it in our little toaster oven until the cheese was nicely dark brown (the way I like it). Also had the left over veg and a few more pcs. of Tempeh (that wouldn’t fit on my muffin).

Broiled Flounder with a Saucy Surprise

Ted ate WAY too much meat over the past couple of days so I’m punishing him (in his mind) with fish. We had fresh flounder (at least we THINK it was fresh – hard to tell from the grocery store. We don’t live by the ocean you know).   Here’s the flounderish fixings:

 

  • 1 lb Fresh Flounder Fillets
  • 1 TBS Lemon Juice
  • 1/4 cup grated cheese
  • 1 TBS Hummus
  • 1 TBS SMARTBALANCE
  • Pinch Salt
  • 2 Green Onions, chopped
  • Dash hot sauce
  • Fresh Dill and also some for garnish

Preheat the oven to broil.  Place fish in oven proof dish that you have either sprayed with non stick or buttered well.  *I drizzled infused olive oil on bottom of foil lined pan.  Mix together the cheese, hummus, SMART BALANCE, salt (you may not even need this salt), onions, hot sauce and set aside for 5 minutes.  Go ahead and put that fish in the oven for about 5 minutes. While the fish broils, simply heat the cheese-hummus mix in the microwave for 25 seconds or so just to soften so it’s easily spreadable. Remove the fish from the oven when ready and spread your mixture of cheese, hummus, etc. on top. Put the fish back under broil for another minute. 

Wasn’t that just the easiest way to cook flounder?! Great job!

We had green beans with a little splash of lemon and fresh dill to accompany the fish.

It’s back to a normal work week tomorrow. There is still alot to do to get 2008 closed…paperwork, paperwork, and more paperwork.  So… when’s the next holiday?
