Instead of little love notes, this is the email I get from my hubby.  We obviously focus way too much on the dog!  But that has nothing to do with good eats so, we’ll move along…

Late Lunch

It was one of those days, so I didn’t get lunch until close to 1pm.  My snack held  me over.   Oikos, nuts and raisins.

oikos-and-trail Since there wasn’t much time when I got home to start chopping salad veg., I decided on left overs. Ted had just made brown rice, so that couldn’t be passed up.

I heated the left over Tiered Trio of Vegetables plus a cup of the 13 bean chorizo, added 1/4 cup of rice and enjoyed the warm meal on a cold day.

13-bean-chorizo-and-tiered-trio-veg  The picture is a bit of a blur. Could have been the result of 2 things: 1. Shane was nosing at my arm for attention. 2. I was in a rush since I had to eat and run.  Considering it was a rushed meal, it hit the spot.

Dinner came late tonight.  I cooked a butternut squash in the microwave for 15 minutes.  Cut into 4’s and place cut side down in a microwaveable dish, add a little water. Set microwave to high and let it go for about 12 – 15, depending on the size of the squash and the power of your oven.  We don’t add anything to the squash, simply mash it. It carries so much natural flavor and sweetness, why mess with nature?

We had soup and poached eggs with the squash.  I poached the eggs the old fashioned way using boiling water, vinegar, a little salt.  Added one egg at a time, when cooked, put it in hot water to rinse off the vinegar and served with the squash and soup.  Ted was a 4 egg man tonight and I can only eat one whole egg – my preference is not to eat whole eggs at all but that wasn’t an option tonight.

What’s all the to do?

Ok so now this Almond Torte I’ve been working on.  Finished! Yes- Done!  I have a few of them because it is an experiment in perfecting the recipe.  On Sunday, we gave our friends two out of the first test group.  I’m hoping for some honest feed back.  Tomorrow, we have 2 more to distribute and then 3 more going out at the end of the week.

They are kind of fun to make, a little time consuming, but I think it’s going to be a great holiday treat.  We’ll have to see. I’ll treat you to the end result photo and then within the next week or so (maybe tomorrow) I’ll be posting the instructions for anyone to try. But you have to tell me what you would do different!

  The other wonderful thing about these almond tortes, the house smells HEAVENLY when they are baking.
