Lemon Quinoa with Zucchini, Currants and Dill

If you are looking for a nutritionally packed, easy, zingy side dish, this recipe is perfect.  As suggested in the book “Ancient Grains for Modern Meals”, simply pair this tangy dish with grilled fish, chicken or just top with crumbled feta, maybe even spoon creamy Greek yogurt on top.   If none of that appeals to you, serve it straight up delicious as we did. Serves 6 – Perfect for Zucchini season! 1 TBS olive oil 6 green onion, chopped 1 leek, white part only, cleaned and chopped 1 tsp sea salt 1 cup quinoa 2 cups water 1/2 cup currants [...]

Breaking Routine and Mango Avocado Salsa

Our typical Friday night routine is dinner out then home to watch a movie or one of our favorite series when it’s not a repeat.  Our typical Saturday is spent doing chores after a good workout. Sunday, a long workout, breakfast and chores, baking/cooking something special and/or relaxing ….depends on the weather.  This week, we broke from routine. Friday:  We DID eat dinner out but went to Vernon Downs to see Ostrich and Camel races instead of the Standardbreds, (although they were racing as well). The Ostrich went off before the Camels.  The birds pulled a buggy sort of contraption [...]

Union Square: Pumpkin Risotto

Pumpkin, maple syrup, arugula…so much flavor in this dish.  The Union Square Cafe out did themselves with this mix of flavors. The perfect winter, warming rice dish.  Use diced squash, simmer in a homemade broth with the sweetly spiced pumpkin flavors to bring out the best of this dish. First, make the pumpkin broth. *I split the broth between vegetable, cider and wine but you can use all 8 cups of stock if you want. 1 TBS olive oil 1 onion, thin sliced 2 carrots, peeled and sliced 2 celery ribs with the leaves, washed and sliced 1 leek, white [...]

Marathon Favorites and Broccoli Squash Salad with Tahini Dressing

I recently read an article listing ten "must do" marathons for various reasons such as scenery to the challenge of the course. Some I've done, some I will do, some I would like to do, and some I will never do. The ten mentioned in the article: 1. Chicago = Ted and I will do this on October 13, 2013. 2. New York City = I've qualified to avoid the lottery system so I'm looking at 2014 to be my NYC year. 3. Boston = Done it 3 times and hoping for a 4th, 5th, 6th...10th. 4. Great Wall = [...]

Avocado Banana Toast

For this interesting blend of flavors, you have to begin by making the bread.  Very easy and not your standard bread recipe.  The next day, it’s even tangier and I do mean the bread. It gets tangier. Recipe makes 1 large standard loaf 3/4 cup luke warm 2 % milk 1 1/4 tsp yeast 1 small avocado – mashed 1 medium over ripe banana – mashed 2 tsp lime juice 1 tsp citric acid (optional since not many home bakers have this in their cupboard) 2 cups all purpose flour 1 2/3 cup bread flour 2 TBS beet sugar (granulated [...]

Long Jog and Pickled Beets with Tagatose

This weekend was our anniversary.  13 years!  It hasn’t gone well. This and that and the other…you know.  Naturally falling in line with all other things upsetting, my running suffered.  My mind wasn’t in it so every step, every foot fall, felt like a bowling bowl dragging me back.  Saturday:  A 90 minute run. Ran with Ted and the dogs then finished the last 40 minutes alone. My mind was heavy with bad thoughts and upsetting things.  I was just happy to finish. In spite of everything, I looked forward to Sunday’s long run. 20 miles.  Taking it easy and [...]
