Lemon Quinoa with Zucchini, Currants and Dill

Carrot Currant Quinoa

From CU Chefs, Clemson University, featured in  American Culinary Federation’s Ingredient of the month:  Quinoa. Interesting Info about Quinoa: 1/4 cup uncooked yields 1 cup cooked and approximately 16% of the daily value recommendation for protein. Breaking Routine and Mango Avocado Salsa

Our typical Friday night routine is dinner out then home to watch a movie or one of our favorite series when it’s not a repeat.  Our typical Saturday is spent doing chores after a good workout.
