Original Recipe for Biscotti

Well, ALMOST the original recipe with the exception of using walnuts instead of almonds.  The method is the same and so is the base ingredient: simply flour, sugar, baking powder, salt, eggs and extracts.  The recipe and information was taken from the “FOOD” section of the Observer Dispatch, Friday April 3, 2015. An article by Domenica Marchetti, special to the Washington Post. Biscotti means “twice baked” and results in a delicate flavored cookie, usually with an almond flavor.  It’s easy to make and a beginner baker can find success with the first batch as long as certain techniques are followed: [...]

Cuccidati: Italian Fig Cookies with Gluten Free Pastry Crust

So much for not running. I did manage to take 3 full days off, just doing weights and walking the dogs.  By Saturday, I figured it was worth while “testing the water”.  After getting back from a long walk with the dogs, I hopped on the treadmill for 3 miles.  The knee felt ok. Then it got sore as the day went on.  By bedtime, the pain had subsided.   Sunday morning, no excruciating pain so I set out the door with Shane.  Starting out was a little painful but once I got to the end of the road, the pain [...]

CNYEats Italian Soft Cookies

It was a much nicer weekend for running in CNY.  The roads were clear and the weather slightly warmer.  It would have been a lot warmer if I chose to run later in the day but no. I’m a die hard early morning runner and will suffer what comes with it.  My weekend running was done in temperatures of 26 degrees to 32 degrees.  Can you believe that range actually feels good?!! Saturday was 8 miles with only one hiccup:  At the end of my run with Zoey, she pulled me too fast off a sidewalk and I felt a [...]

CNYEats A Taste of Utica Calginiti aka Ceci Cookies

I forgot about this recipe from CNYEats A Taste of Utica. I made it a couple of weeks ago to post. Better late than never. Getting ready for the holidays and starting to think of all the sweets to entice family and friends to come and visit. A Taste of Utica cookbook is the place to start. Fried Ceci Cookies are a favorite for the holidays but just as good before and after your celebrations.  A “ceci” is a garbanzo bean aka chick pea and is the main ingredient for filling these cookies. Makes 65 cookies – Posted in our [...]

CNYEats A Taste of Utica Cannoli Shells and Filling

If you live in upstate New York you know all about Cannoli.  That wonderful dessert in a crisp, delicate shell that houses a creamy, rich filling of ricotta sweetened cheese.  The only thing better than a cannoli from your favorite bakery or restaurant is one you made at home.  The cannoli shell is typically fried.  I don’t enjoy frying because it’s messy.  I love baking and cooking but I don’t love clean up.  If there is a way to avoid it, I’ll take it.  Creativity was put to work when I decided to make the cannoli but there was no [...]
