Flying Solo and Oven Rice with Kale Pesto

I’m finally going to do it alone this summer. I’m running my first marathon with out Ted waiting for me at the finish line.  It will be Grandma’s Marathon in Duluth, MN on the 20th of June. A little nervous and a little excited.  Nervous – well, things could happen. Not sure what but, you know…things. Excited – to see how I deal with all my nervousness and anxiety which raises it’s ugly head days before a marathon ALONE!  Also, it will be nice to stroll through the expo without thinking the person I’m with is bored out of his [...]

School of Fish Tuna 101 with Sunflower Seeds, Lemon and Chives

After visiting several different weather sites in hopes of finding one, just ONE, that offered a ray of hope for a warmer tomorrow in upstate New York, I finally accept defeat. It’s not so much the 2 degrees, it’s the “Feels Like –16” that’s really getting to me.  Of course the treadmill will be turning and my legs will be flying along on that “hamster wheel” but not before Shane and Zoey have to go out for their morning constitution.  Oh the thought!  It’s going to keep me up all night. On a warmer note, let’s talk recipes! One of [...]

Easy Does It on a Weeknight- That Incredible Edible Egg

I thought this week should be taper week but it doesn’t seem like taper week. I’m tired, I’m cranky, I’m absolutely desperate to sleep in.  But no, not until November 3rd, the day after the New York City Marathon or rather the TCSNYC Marathon.  When I run with Zoey in the morning, I’ve been getting so frustrated with her constant pulling. It makes my runs miserable because I feel rotten having to pull on her so much. Tomorrow, she wears her back pack. It’s the only way she will slow down.  As for Shane, he’s my easy pacer.  He has [...]

Scallops with Nori Butter and Dill

The two main features in this recipe, the scallops and the nori,  Nori enhances the sweetness of the scallops.  Make sure to present the entree in a way where the scallops cannot be eaten without the nori.  Ignore any complaints about eating green food! … and what ever you do, don’t tell them it’s healthy. Note: I used Smart Balance Healthy Blend plus a little olive oil to replace the butter. 3 toasted nori sheets 1/2 cup unsalted butter - or substitute with your favorite healthier alternative to butter 1 1/2 TBS of chopped fresh dill salt to taste 1 [...]

Gluten Free Peach Cherry Grilled Shrimp in Cabbage Wraps

Keep this recipe gluten free by using cabbage or lettuce as a wrap for grilled shrimp in a delightfully fruity, slightly spicy glaze.  If you don’t follow a gluten free diet, this recipe would be terrific with regular yellow corn taco shells. Serves 4 1 large head of cabbage:  Gently remove 4 large leaves, wash and put in a large pot of water. Cut cabbage in half and separate more leaves, almost down to the core. Fill pot half full with water, bring to a boil and cook over a boil for 6 – 8 minutes. Remove from heat and [...]

Yellow Split Pea Salad with Caponata

Do you ever give yourself a pat on the back for that experimental recipe that turns out so good?  If not, you should.  I do.  This recipe is one of those “HAIL TO THE CHEF!” kind of recipes.  The base of the recipe is a lot of fresh vegetables with cooked split yellow peas.  The complexity of taste and texture comes from adding 7 oz of Caponata and marinated artichoke.  Complex but light.  Vibrant but simple.  Serve chilled or at room temperature and finish with a drizzle of balsamic glaze. *I even added 1/4 cup to some Eggbeaters and made [...]
