Tortellini Spinach Soup Revisited

The weather has turned and it’s time for soup. After fun in the cold, wet snow, there  is nothing better than a big, robust bowl of soup. I was reminded of the healthy benefits of including spinach in our diets by Helen of Well-BeingSecrets. Check out this super food here: Spinach Health Benefits Now, what about that soup?   Well one of my all time favorite recipes for dinner in one dish is the Ellie Krieger recipe I made back in 2012.  Link here: CEImB Tortellini Spinach Soup. I tweaked the original recipe as follows: 1 TBS olive oil 1 medium [...]

Flying Solo and Oven Rice with Kale Pesto

I’m finally going to do it alone this summer. I’m running my first marathon with out Ted waiting for me at the finish line.  It will be Grandma’s Marathon in Duluth, MN on the 20th of June. A little nervous and a little excited.  Nervous – well, things could happen. Not sure what but, you know…things. Excited – to see how I deal with all my nervousness and anxiety which raises it’s ugly head days before a marathon ALONE!  Also, it will be nice to stroll through the expo without thinking the person I’m with is bored out of his [...]

School of Fish: Dover Sole with Marsala Sauce

Along with trying to keep fit in this frigid wintery weather, we have been eating healthy …again.  The holidays are over, the cookies gone, candy canes put away (although when I crave sweets, my go to candy is peppermint) and the focus is on fruits (fresh and dried-no sugar added)  to satisfy the sweet tooth.   To keep the heart pumping and metabolism burning, Ted’s taken to doing some vigorous cycling workouts using a DVD.  As for me, my running hasn’t been vigorous since the aching knee keeps my speed in check.  The goal, as I said before, is simply to [...]

Time for Stew

It's already September and, if you live in the North East, you are preparing to brace for cooler temperatures. Let's begin thinking about warming dishes like stew.  *Warning! Not vegetarian.  If you’re a vegetarian, proceed to the end and help me find a great substitute to make this stew right for me. This recipe is a slow cook recipe but not in the crock pot, it's cooked in a bean pot. The local paper featured this recipe from Celebrating Home  and I just knew it was one for Ted, modified of course! Serves 4 1 lb. round steak, in 1 [...]

Cookbook Review: Secrets of a Skinny Chef

Great title! Secrets of a Skinny Chef.  This 196 page book offers 100 recipes to satisfy your taste buds, your body, and your soul. The books author, Jennifer Iserloh, provides ingredients that are nutritious and filling such as whole grains, proteins, and vegetables.  Your favorite recipes are transformed into “healthy and delectable creations”.  Nutritional content is provided after each recipe. What attracted my attention to this book was Jennifer’s belief that “Maintaining a healthy weight, or getting to that healthy weight, is not about dieting, it’s about celebrating food.”  I love to celebrate food. I think we are so fortunate to [...]
