Hurry Up Summer! Make Vegetable Ceviche

Dean Karnazes:  “Some seek the comfort of their therapist’s office, other’s head to the corner pub and dive into a pint, but I chose running as my therapy.” Here in upstate New York, we are still waking up to single digit temperatures.  Hard to believe.  Even though the snow is piled up in our driveway, the weather man insists we are short from the average range.  Enough is enough. I’m going to create the feeling of warmer weather by tapping into a summer recipe.  Please don’t judge me since I’m using non-seasonal ingredients but that won’t make this dish any [...]

Culinary Roundtable with Lean Cuisine

I love to cook and bake.  My favorite room in the house is the kitchen.  My feet get very little rest, even after a long run, because the way I wind down, relax, is spending down time in the kitchen.  What I’m getting at is there hasn’t been a frozen aka TV dinner in our house for years! Until now. Meet Chef’s Pick from the Lean Cuisine Culinary Roundtable. In fact, there is nothing fancy about my salads except a good quality balsamic vinegar and extra virgin olive oil.  I was looking forward to the [...]

Ant Attack and Bay Scallops

I  was bound and determined to get back on track with my running schedule. I did a double workout today incorporating yesterdays speed work with todays easy 50 minute run. Was it tough? Oh yeah. Did I get it all done? Oh yeah.  64 minutes on the treadmill running 5 minute intervals with 3 minute rests at half marathon pace PLUS 55 minutes outside with Shane for an easy run.  13.4 miles.  My bad leg is grumbling but the rest of me is fine.  Would I recommend making up a missed workout to anyone else by doing double duty? No [...]
