I’LL take care of it.”  Oh to be a kid again! At what point do we lose the desire to be older and start wishing we were young again? For me and as far as I can remember, the best times were in my 20’s to mid 40’s.  It was a good run. Now I’m a young 53 [...]

Homemade cinnamon raisin bread with overripe bananas that seem to accumulate in our house were turned into a delicious, disappearing Banana Custard. Personal Accountability and Japanese Styled Cheesecake

Personal accountability for food.  From a recent article published on ama.org:   “The effectiveness of public policy interventions are dependent on individual differences in consumers’ self-control”.   “Lack of understanding in this area may result in policy intended to influence consumer behavior in a positive way, influencing behavior with a negative outcome instead.”  Those who enjoy the “Big Gulp” will continue to enjoy it even though they have to pay more. Japanese Styled Cheesecake The ultimate in creaminess and soft texture with hints of lemon, no crumb base, just all cheesecake to enjoy.  Personal accountability out the window on this one. Serves [...]

Bob’s Red Mill Gluten Free Blueberry Lemon Muffins

Hero’s of the Mill were given something very special this week.  The newest gluten free creation from Bob’s Red Mill Milwaukie, Oregon “Gluten Free Muffin Mix”. A delicate blend of fine rice and sorghum flours with a combination of starches, lightly flavored with vanilla to produce such a light, fluffy mouth watering muffin.  I added 1 cup of frozen blueberries with 2 teaspoons of fresh lemon zest.  These will not last long. Too good! This mix brought back the desire to bake to this unmotivated, sad baker. Thanks Bob’s Red Mill! Makes 12 standard, light, sweet muffins. 1 16 oz [...]

Raspberry Banana Creamy Yogurt Cake

This time last week I was celebrating a very enjoyable marathon victory.  It wasn’t a personal best but it was one of my better runs by way of enjoyment, effort, and time.  The weather was perfect for a run and I felt terrific upon finishing.  I felt so good, I decided to run the annual Heart Run and Walk.  It’s not a race but an organized run of multiple distances:  3 mile, 5 mile, 10 mile, and 18 mile.  For the past 4 years, I have run the 18 mile as part of my Boston Marathon training.  This year, since [...]
