A Culinary Review Recipe for Mushroom Potato Lasagna

“Nothing is impossible.  The word itself says “I’m possible”! – A.Hepburn” Burnout has raised it’s ugly head. I flew back from S.C. on Monday to face more cold weather in New York.  Thinking positive, I set my alarm for an early morning mid range, speed workout.  Got out of bed faithfully, dressed, looked at myself AND the temperature and asked “Why?” There was no good answer so I took off my clothes and went back to bed for an hour and a half.  The result was that miserable, grumpy, “I let myself down” feeling all day.  HOWEVER…the sun was shining [...]

Union Square Cafe: Roast Stuffed Eggplant with Tomato Sauce

“Union Square Cafe serves some of the most imaginative, interesting, and tasty food in America. Now its devoted fans from down the block and across the globe can savor the restaurant’s marvelous dishes, trademark hospitality, and warm decor at home. By Danny Meyer and Michael Romano” Source: Union Square The recipe for Roast Stuffed Eggplant with Tomato Sauce is in the Appetizer section of the book.  To us, it was a whole meal.  I added, instead of the anchovies listed below, vegetarian ground sausage.  Serves 4 6 Baby eggplant (I used 2 large) 3 TBS olive oil 2 tsp minced [...]

Should I and Sweet Peppers with Mushrooms Topped with Egg

A bit of a dilemma going on in this head of mine.  I’m signed up for the Syracuse Empire Marathon on Sunday.  The weather isn’t looking very pretty for Sunday’s run but that’s the least of my concerns.  I came away from Chicago feeling ready to go again.  I’m not super woman it’s just that the plan was to run with Ted in his first marathon and give him any support he needed along the way.  We ran at Ted’s speed which had to be very slow with walking breaks along the way.  Ted insisted on completing his first marathon [...]

FOFF Cheese Irish Mix Up

Snow is coming our way again.  Not only is it difficult running when there’s a lot of snow in the road but cars don’t like to drive in it either.  You know how the wheels of vehicles will make two clear lanes on a snow covered road?   As a runner who avoids the snow, I like to run in those clear lanes when there are no cars approaching.   But you know what’s funny?  Cars like to drive in those clear paths as well.  There have been times when a driver would rather take me out than drive to the far [...]

Coming Down and Tuna Casserole with Fresh Tomatoes

Coming down off my “feel good”, confident high due to a very slow run this past weekend. It was my last long run before the marathon in Dayton, OH.  I left Shane at home since I wanted to keep running without having to turn for home and drop him off.  My course was flat since I wanted to give my self the advantage of a good run and confidence boost. It just didn’t happen. I’m not sure if it was just me having a bad run or if it was the 10 mph to 16 mph wind gusts or if [...]

Time for Stew

It's already September and, if you live in the North East, you are preparing to brace for cooler temperatures. Let's begin thinking about warming dishes like stew.  *Warning! Not vegetarian.  If you’re a vegetarian, proceed to the end and help me find a great substitute to make this stew right for me. This recipe is a slow cook recipe but not in the crock pot, it's cooked in a bean pot. The local paper featured this recipe from Celebrating Home  and I just knew it was one for Ted, modified of course! Serves 4 1 lb. round steak, in 1 [...]
