New York Apple Muffins

This morning I ran with Zoey for 6 miles.  It felt good. The weather was cool, 36 degrees very little wind and the sun was just peaking over the horizon.  Six miles is a good distance.  It feels healthy, just enough to get the heart pumping and do-able under an hour. Nice! I’m in taper mode for the Marine Corp Marathon next weekend.  I only hope the weather is just as perfect as this morning but what ever nature throws my way, I’ll get through it.  One day my mind is in “just enjoy it, take your time, anything under [...]

Donut Hole Cake

The room smells like donuts.  Just look on the counter and you’ll see why.  It’s a huge cake dotted with donut holes.  A moist devil’s food cake envelopes 12 plain donut holes.  Over the top, decorating the rich chocolate frosting are 12 more donuts, cut in half to make an interesting pattern. Unique inside and out. Here’s what you need: 2 boxes of Devil’s Food Cake mix 15 plain donut holes 3 cinnamon donut holes 3 powdered sugar donut holes 3 chocolate donut holes 16 oz chocolate frosting 16 oz cream cheese frosting Prepare the cakes according to the box [...]

Bob’s Red Mill Gluten Free Blueberry Lemon Muffins

Hero’s of the Mill were given something very special this week.  The newest gluten free creation from Bob’s Red Mill Milwaukie, Oregon “Gluten Free Muffin Mix”. A delicate blend of fine rice and sorghum flours with a combination of starches, lightly flavored with vanilla to produce such a light, fluffy mouth watering muffin.  I added 1 cup of frozen blueberries with 2 teaspoons of fresh lemon zest.  These will not last long. Too good! This mix brought back the desire to bake to this unmotivated, sad baker. Thanks Bob’s Red Mill! Makes 12 standard, light, sweet muffins. 1 16 oz [...]

Eating Equals Energy and Oatmeal Cookies for Breakfast

When I first decided to run longer distances, 10 miles or more back in 2009, the thought of eating something before these early morning runs never occurred to me. After all, I had been going to the gym for years and running 5 miles a couple of hours before having any kind of food. I remember my first attempt at 12 miles on a stomach full of NOTHING.  An epic failure.  I was very careful working myself up to running that distance without getting injured although paid no attention to an equally important aspect of endurance which is nutrition.  Now, [...]

A Peanut Butter Surprise

Wow! I mean… there is no other way to say it but   WOW! Checked the mail yesterday and this is what I found:  Eight jars of the best peanut butter I’ve ever tasted. Not kidding!  I’ve always loved Teddie peanut butter because it was so pure and tasty but when we jumped right into our Peanut Butter Boy PB, we found new love. It was so natural tasting and not as sweet.  The texture for the creamy blend is smooth and soft AND the oil wasn’t separated.  A recipe is included on the jar for Cinnamon Peanut Butter. Here’s more [...]

Fiber One Breakfast Muffin

“All our dreams can come true-if we have the courage to pursue them.” –W.Disney “You didn’t beat me. You merely finished in front of me.” –Hal Higdon This Sunday I’ll be exploring the streets of Tacoma, Washington while enjoying the premiere event for the Marathon Maniacs.  I joined in October 2013. The course was changed for the 2013 race to a net down hill route. Although the elevation profile doesn’t look too bad, the recaps from last year’s runners seem to tell a different story.  It makes me a little nervous, facing a rolling hill course that I won’t be [...]
