Baked Cod

Easy Bake Cod For Christmas

It’s Christmas Eve!  Are you excited?  Is Santa coming to your house? He’s already left a little trail at our house but we’ll leave some cookies out so he can come back and leave the Christmas stockings.  There isn’t much more room under around the tree.  You see, we have to celebrate a special birthday as well as Christmas on December 25th.  My father will be turning one year older. He’s totally A M A Z I N G for his age.  He gets up early, walks, plays golf 2 to 3 times per week, and keeps very busy in [...]

The following recipe was based on a recipe from Cooking Club. It was originally “Herb-Crusted Salmon Fillets”.  I turned it into Cod. [...]

Seared Cod with Pomegranate Reduction

The folks at POM Wonderful have done it again. They came out with two terrific flavors.  POM-Kiwi and POM-Mango.  I drank about a third of the bottle of the kiwi flavor and was blown away. It was great.  I thought I’d share the rest with Ted in a great sauce for dinner.  I made this POM Reduction to pair with seared Cod fish which was finished in the oven.   Sorry about the miniature photos, I thought I had set the transfer to "Original Size".   I think  my home computer is possessed and does what it wants just to annoy me.  An [...]
