Baking something delicious for snacks or dessert doesn’t get any easier than these blueberry oatmeal squares.  I’ve seen a lot of this type of recipe on various sites lately which encouraged me to jump on the wagon and get baking.  Boy! Sure glad I did ‘cause these beauties are going fast.

The original recipe wouldn’t be touted as the most healthiest if one were watching sugar in take and fat.  Given a few substitutions, we can make these squares rank just that little bit higher on the nutritionally packed calorie scale.

Wild Maine Blueberry Oat Squares

Ingredients
  • 2/3 cup dark brown sugar (do not pack)
  • 1 cup + 2 TBS all purpose flour (OR use whole wheat instead for added nutritional goodness)
  • 3/4 tsp salt
  • 1/2 tsp baking soda
  • 1 1/4 cup whole rolled oats
  • 1/2 cup unsalted butter, softened (OR use 1/4 solid coconut oil and 1/4 butter for slightly healthier fats)
  • 2/3 cup to 3/4 cup Wild Maine Blueberry fruit spread
Instructions
  1. Makes approximately 20 small squares.
  2. Preheat the oven to 350 F. Spray the sides of an 8” or 9” square pan and line the bottom with parchment.
  3. In a large bowl, mix the sugar, flour, salt, soda and oats. Cut in the softened butter and mix to a crumble.
  4. Press about 2/3 to 3/4 of the crumb mix into the bottom of the prepared pan on top of the parchment. Spread the fruit over the top slightly short of the edge so it doesn’t bake to the side of the pan.
  5. Top with the remaining crumb and gently press on to the fruit spread.
  6. Bake 40 minutes. Allow to cool and cut into squares.

The reason I continue to bake delicious snacks and desserts that have a crumble style topping is for the excuse to nibble during clean up.
