I thought this week should be taper week but it doesn’t seem like taper week. I’m tired, I’m cranky, I’m absolutely desperate to sleep in.  But no, not until November 3rd, the day after the New York City Marathon or rather the TCSNYC Marathon

When I run with Zoey in the morning, I’ve been getting so frustrated with her constant pulling. It makes my runs miserable because I feel rotten having to pull on her so much. Tomorrow, she wears her back pack. It’s the only way she will slow down.  As for Shane, he’s my easy pacer.  He has been cutting back on the distance so when we go out for a few miles, he stays fresh.  Complaining is really irrelevant since I love running with my dogs and wouldn’t have it any other way. Note to self: Must remember this when Zoey is taxing my nerves.

This is how the week in training looks and why I’m complaining (but only a little):

Monday:  6 miles (following my 20 miler on Sunday – that was not a welcome run).

Tuesday: 3 mile warm up, 8 x 1 minute repeats, 3 mile cool down. – went ok after I ditched Z at home and was able to run without being pulled.

Wednesday: 8 miles easy

Thursday:  3 mile warm up, 3 miles Tempo, 3 miles cool down (not looking forward to this – hate, really hate tempos)

Friday:  OFF

Saturday and Sunday:  6 miles OR 20 miles steady pace – *depends on weather, 20 Saturday or 20 Sunday???

EGG SALAD, GUACAMOLE, FRENCH CUT GREEN BEANS & ENGLISH CUCUMBER:  An Easy, Healthy, Week Night Meal.

Make the Guacamole

  • 1 Haas Avocado – sliced, pitted and scooped out, then mashed.
  • 1/2 sweet onion, chopped really small
  • 1 plum tomato, seeded, chopped really small
  • 1 to 2 TBS fresh cilantro, chopped
  • zest of one lime
  • juice from half a lime
  • salt and pepper to taste

Mix all the above in a bowl and chill until ready to serve.

Make the Egg Salad

  • 6 hard cooked large eggs, chopped small
  • 1/2 sweet onion, chopped small
  • 1 celery stalk, chopped small
  • 1 1/2 TBS 1/2 Fat Mayonnaise
  • 1 to 2 TBS chopped parsley
  • 1 tsp Dijon mustard
  • 1/2 tsp dill
  • zest from one lemon
  • salt and pepper to taste

Mix all the above in a bowl and chill until ready to serve.

To serve

  • Slice thin, 1 English cucumber
  • Heat 8 oz French cut green beans.
  • Serve a scoop of guacamole, a scoop of egg salad on a plate with green beans and fresh cucumber.
