Once again creativity in the kitchen abounds by combining nutritionally rich ingredients resulting in a flavorful, guiltless protein, energy snack.

Good Points:  Low Cholesterol, Low Sodium, High in Iron, VERY High in Vitamin B6           Bad Points: Can be high in sugar if you use regular dried fruits, regular peanut butter.

Makes 30 Protein Disks each about 2” in diameter and 1/4” thick

  • 1 cup Kashi GoLean Vanilla Graham Clusters (or Original GoLean Cereal)
  • 1 cup Rolled Oat – dry/uncooked
  • 1/2 cup chopped walnuts
  • 1 cup raw pumpkin seeds
  • 2 1/2 cups 50% less sugar Craisins – OR use raisins, dried dates, or other dried fruits
  • 3/4 cup natural peanut butter
  • 1 TBS Flax meal
  • 1 TBS clover honey
  • 1/2 cup Vanilla Protein Powder *I used Arbonne because it is Vegan friendly but what ever your favorite protein powder is will do.

This is a NO BAKE recipe so simply take out your food processor and add the Kashi, Oats, Nuts, and seeds.  Process until smooth = about 1 minute.

Add the Craisins or other dried fruit to the processor to combine with the Kashi mix. Allow to process until the mixture gets sticky, about 2 minutes or until all dried fruits are well combined with the Kashi mix.

Add the rest of the ingredients:  peanut butter, flax, honey, and protein.  Process until sticky about 2 to 3 minutes, stopping half way to turn it over with a spoon, making sure everything is mixed and the color is uniform throughout.

Pour the mix onto a cookie sheet and scoop up a Tablespoon to first form a ball, then flatten into a disk with the palms of your hands. This should form a 2” disk, about 1/4” thick.

Now – eat and take in all the good flavor and nutrition!
