CNYEats A Taste of Utica Spinach Balls

Posted by Toni (Leone) Guzski on page 139 of our book, A Taste of Utica, another tasty treat. A side dish?  A healthier snack while watching football, a movie?  These spinach balls will suit your fancy just about any time, any where.

Makes 1 dozen

  • 1 pkg of chopped spinach – using frozen, defrost and squeeze excess water
  • 1 cup cooked rice
  • 1 large egg
  • 1/4 cup Romano cheese
  • 4 TBS melted butter (this isn’t necessary if you want to make a lower fat snack)
  • 4 TBS whole wheat bread crumbs
  • 1/4 tsp garlic powder

Mix all the ingredients together.  Refrigerate for 1 hour.

Preheat oven to 300 degrees.  Shape the mixture into 12 equal size balls and bake for 30 minutes.

I couldn’t get enough of these simple, tasty eats.  Nothing more to say except – soooo good!
