Makes 1 dozen
- 1 pkg of chopped spinach – using frozen, defrost and squeeze excess water
- 1 cup cooked rice
- 1 large egg
- 1/4 cup Romano cheese
- 4 TBS melted butter (this isn’t necessary if you want to make a lower fat snack)
- 4 TBS whole wheat bread crumbs
- 1/4 tsp garlic powder
Mix all the ingredients together. Refrigerate for 1 hour.
Preheat oven to 300 degrees. Shape the mixture into 12 equal size balls and bake for 30 minutes.
I couldn’t get enough of these simple, tasty eats. Nothing more to say except – soooo good!
