A little hint of lemon in a cool, delicate cookie.  Shape them any way you like.  I used my “Super Shooter”. Remember that Hamilton Beach contraption?

A quick way to shape the cookie for variety.

Mom’s Cookies – Makes approximately 100 cookies

  • 4 eggs
  • 1 cup sugar
  • 1 cup healthy option margarine, such as Promise or use butter (after all – it IS for a wedding) – MELTED
  • 1 cup milk *I used cream
  • 1 tsp vanilla extract
  • 1 tsp lemon extract *plus a little extra
  • 5 cups flour, sifted
  • 6 tsp baking powder

Preheat the oven to 350 F.

Beat the eggs well.  Add the sugar and beat again.  Add the margarine, milk, and extracts.

Add the flour and baking powder.  Mix well.

If you want to form shapes, place the dough on a floured board, knead and shape the cookies with hands.  Size is about 1 1/2 tsp.

Place on greased cooked sheet and bake for 12 minutes.
