It was just one of those days. The weather screamed for us to be outside.
I took advantage of the cooler start to the day by running with Shane. It was just so beautiful outside, I couldn’t stop. We went 9 miles, I dropped Shane off and continued on for a total of 12 miles. It wasn’t until the last mile that my legs started to get tired. It was just so nice and I wanted to keep running.
Ted came home from coffee with the guys. We did a few chores and decided to go for a slow and easy bike ride. After 11 miles, ICE CREAM called our name!

The ice cream was so good, cool, and refreshing. Just what we needed.
No flat tires, no obnoxious drivers, the day was good. We stopped at Rock’ house to invite him over for pulled pork sammy’s. I made way too much for just Ted. He needed help eating it and Rock couldn’t refuse. Besides, it was a holiday and we wanted to celebrate with friends and good food.
What a day. A 12 mile run. 18 miles on the bike. A good meal (pulled pork for the guys, soy burgers for me, whole wheat rolls, macaroni salad, garden salad, and FOR DESSERT…
S’MORES LOAF CAKE!
Come on. Just this ONE time. Be a kid again. Forget about less sugar. Forget about lower fat. Forget about trying to figure out a great dessert that’s good for you. Be a kid again and make S’Mores…a S’Mores loaf cake that is.
This cake came to mind as I was thinking about picnics, parties, warm summer nights and camp fires.
Makes 2 large loaf cakes. Difficulty level: EASY!
- 1 cup sugar
- 3/4 cup Demerara sugar *or use another 3/4 cup granulated sugar
- 1 stick unsalted butter
- 3 large eggs.
- 1 1/4 cup heavy cream *or use whole milk
- 2 tsp vanilla extract
- 2 cups all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 3 cups mini marshmallows
- 1 cup mini chocolate chips
- 1/2 cup graham cracker crumbs
- – buttery spray such as Olivio
Preheat oven to 350 F.
Cream the sugars, butter and eggs. Add the cream and vanilla and beat on high for 2 minutes.
Mix in the flour, baking powder and salt. Stir until all is blended but do not over mix.
Stir in the marshmallows and chips.
Turn batter into large loaf cake pans that have been sprayed with non-stick spray.
Sprinkle the cracker crumbs on top. Spray top of crumbs with buttery spray.
Bake for 20 minutes. Gently rest a large piece of aluminum foil over the tops of the loaves. Continue
baking at 350 F for another 20 – 25 minutes.
The marshmallows melt into the cake. It’s sweet, chocolaty, with a little “crunch” on top.
Perfect for everyone.
12 mile run and 18 miles on the bike?! I admire your workout ethic so much! This weekend was so beautiful, and I definitely enjoyed working out as well. That’s s’mores bake looks sooo yummy, too 🙂
