CEimB Southwest Hash and Eggs

We didn’t have this meal as a brunch or breakfast, we enjoyed it as a quick and healthy weeknight meal. 

I made only a few changes: 

I used a green bell pepper instead of red. I like the red bell’s for my lunchtime salad

I served the southwestern hash with low carb whole grain tortillas and we had sliced extra sharp cheddar cheese on the side.

For my dish, Eggbeaters were used instead of whole eggs, topped with hot sauce.  Ted topped his with salsa.

This is a meal that goes together very easily. You use one pan and, after all the chopping and “mis en place”, it will only take about 25 more minutes to get onto the table.

Great choice Melissa. Love dinners when it’s all meatless and Ted isn’t digging out any hidden soy products.

I always think of eggs for dinner since its one meatless dish that Ted will eat.

I have never tried eating just eggs, like scrambled or hard boiled, they just kinda gross me out. However, this looks like something that would be good to start out with because it has so many other ingredients that look great!

Eggs used to do that to me. But then I got so nutrition conscious that I decided to make them in ways that were tasty to me. That’s why I eat Eggbeaters more than whole eggs. Whole eggs can sometimes turn my stomach.

We had this for dinner also and it was a great meal. I like your additions. Whenever, I make an Ellie meal, my husband is a happy camper.

I liked the small amount of oil she used for this entire recipe. I know other chefs who would mostly use a bar of butter in place of that one tablespoon of oil. Ugh.

How is your chocolate baking coming along?

Actually the last recipe, Francois Payards chocolate mousse was really good and it was easy. I’m posting it tomorrow. How about you? Were you able to do it?

How do you make all your photos look so delicious? I’m not good with the photos. Everything you do looks so professional! I love coming to your blog to see what you have done. I did like this “hash,” but the tabasco sauce helped mine a lot as it was lacking a bit in flavor without it. Love your omelet on top!

I love eggs, this looks so good!!! I have been on an egg kick lately I have them whenever I get the craving, lunch, dinner, b-fast. I have specially been loving egg whites with hummus and salsa… so good. You should try it!!

I was actually going to make this for dinner one night too but it ended up being my breakfast. The prep wasn’t too bad and this really was delicious. I’m having the leftovers for lunch tomorrow :)

I can call this a gorgeous omelet or may be a vegan taco, is outstanding :)

Great recipe :)
I made omelets last weekend for Heman, I used ghee (clarified butter) to coat the pan and it cooked the eggs beautifully.

Great pictures – especially the last one with the Frank’s in the background!! That is my favorite hot sauce. I’ve recently discovered sriracha which is inching up there two a close second favorite, but Frank and I are BFF’s from way back :)
